Dough recipe:
2 1/4 tsp yeast
1/2 tsp honey
1 C warm water
2 3/4 C sprouted spelt flour
1/2 tsp salt
Mix 1st three ingredients. Let sit for a few minutes until it’s all foamy and weird. Add in the flour. Knead. Let rise once. Shape, top and bake at 475.
