recipe from the gluten free goddess: glutenfreegoddess.blogspot.com/2007/06/pesto-zucchini-tom…. this is going to become my summertime dish! and actually made me enjoy gf pasta (which i have basically avoided for a year because, eh, yuck). my bread crumbs were from a collection of old gf breads and heel ends from the freezer. the infamous sorghum artisan "no-knead" bread that was such the buzz on the internet and, imo, the worst bread ever, made up the majority of the crumbs. not that bread that is as heavy and dense as a rock makes dense, heavy as a rock bread crumbs. which means i can no totally despise that taste of time recipe. luckily, the roasting zucchini, tomato and artichoke hearts,and the tang of the pesto outweighed even the crummy bread crumbs. i know need to make more bread so i can replenish my bread-crumb supply and make this again! |
